* Banana Cake *



*Ingredients:

°1 1/2 cup bananas, mashed, ripe
°2 teaspoons lemon juice
°3 cups flour
°1 1/2 teaspoons baking soda
°1/4 tsp salt
°3/4 cup butter, softened
°2 1/8 cups sugar
°3 large eggs
°2 teaspoons vanilla
°1 1/2 cup buttermilk
+Icing:
°1/2 cup butter, softened
°1 package (8 ounces) cream cheese, softened
°1 teaspoon vanilla
°3 1/2 cups icing sugar

*How to do it :

1 Preheat oven 275°F/135C.
2 Grease and flour a 9 x 13 pan.
3 In a small bowl, mix the mashed banana with the lemon juice; put aside.
4 In bowl, combine flour, baking soda also salt; put apart.
5 In  bowl, cream 3/4 c butter also 2 1/8 cups sugar to light and fluffy.
6 Beat eggs, one at a time, then stirring in 2 tsp of vanilla.
7 Adding flour mixture with buttermilk.
8 Stir in the banana mixture
9 Pour the batter into the prepared pan and bake in the preheated oven for one hour or until a toothpick inserted in the center comes out clean.
10 Remove from the oven and place directly in the freezer for 45 minutes. This will make the cake very moist.
11 For the frosting, cream the butter and cream cheese until smooth.
12 Stir in 1 teaspoon of vanilla.
13 Add the icing sugar and beat on low speed until smooth, then on high speed until smooth.
14 Spread on cooled cake.
15 Sprinkling chop walnuts on top of the frosting, if desire
