*INGREDIENTS:
°2 cups yellow squash, finely chopped
°1 cup onion, finely chopped
°1 egg, beaten
°1 teaspoon of salt
°1 teaspoon of pepper
°½ cup plus 1 tablespoon all-purpose flour
°vegetable oil
*DIRECTIONS:
In bowl, combine the squash, onion, egg, salt & pepper. Blend well. Stir in flour. In a skillet, heat ½ inch of oil on medium-high heat. Using a tablespoon, dropping dough into the oil. Cook for about 3 minutes on each side or to golden brown, turning once. Drain patties on absorbent paper.
