SHRIMP-PASTA WITH SAUSAGE


*Ingredients :


°½ pound large shrimp, peeled
°1 andouille sausage, for ½ pound, slice
°1-2 tablespoons Cajun/Creole seasoning mix, adjust to spice level/heat
°olive oil
°½ medium onion, cut into thin slices
°½ red pepper thinly sliced
°1 teaspoon dried thyme
°1 teaspoon smoked paprika
°1 tablespoon Cajun/Creole seasoning mix
°1 teaspoon brown sugar
°1-2 garlic cloves, finely minced (1 large or 2 small)
°cup mashed tomatoes
°½ cup chicken broth
°¾ c heavy cream or ½ &; ½ )
°12 ounces fettuccine or farfalle (pouties)
°salt and black pepper
°Grated Parmesan cheese and chopped parsley, to serve

*Methods  :

Bring a large pot of water to a boil for the pasta. Toss the shrimp with 1-2 tablespoons of the Cajun seasoning and cover well. Heat a large skillet over medium heat and place the olive oil on the bottom of the skillet. Add shrimp and cook for 2 minutes or so, until it begins to curl. Flip the shrimp over and leave for a minute or two, then remove to a plate and set aside. Put a little olive oil in the skillet, add the sausages, and brown until well caramelized, about 4-5 minutes. Transfer to a plate and set aside.
Add the pasta to the boiling salted water and cook until done, a minute less than the package instructions.
Reduce the heat to medium and add another fine drizzle of olive oil to the skillet, add the onion, paprika, thyme, smoked paprika, 1 tablespoon of Cajun seasoning, brown sugar, and a pinch of salt.   Fry until the onions and peppers soften slightly, scraping out any possible brown bits. Add garlic and cook until fragrant, 30 seconds.
Add the mashed tomatoes, chicken broth and Worcestershire sauce and simmer, stirring and scraping any browned bits from the bottom of the pan, simmering for a few minutes.   Add cream, stir and simmer over low heat. Once boiling, add the cooked pasta and andouille sausage and stir until combined and heated through, 2-3 minutes. Add more chicken broth or cream if it seems dry or if you want more sauce (I added ½ cup of each). Add salt and pepper to taste and then finally, add the blackened shrimp and mix, or place the shrimp on top of the pasta. Sprinkle with a little fresh black pepper, grated Parmesan cheese, and chopped parsley.
