°Butter
°1 loaf of sourdough bread or French bread
°8 whole eggs
°2 cups full fat milk
°1/2 cup whipping cream (heavy)
°1/2 cup granulated sugar
°1/2 cup brown sugar
°2 tsp vanilla extract
+Topping:
°1/2 c flour
°1/2 c packed brown sugar
°1 tsp ground cinnamon
°1/4 tsp salt
°Fresh grated nutmeg
°1 stick cold butter, cutting to pieces, plus more for serve
°Warm pancake syrup for serving
°1 c blueberries, to serving
* Methods
*For French toast: Grease a baking tray with butter. Cut the bread into pieces or cut into cubes and distribute them evenly in the pan. Crack the eggs into a large bowl. Whisk the eggs, milk, cream, brown sugar, and vanilla together. Pour evenly over bread. Cover the pan tightly and store in the refrigerator until needed (preferably overnight).
To decorate: Mix the flour, brown sugar, cinnamon, salt and some nutmeg in a separate bowl. Stir together with a fork. Add the butter with a pastry cutter and mix it all together until the mixture resembles fine pebbles. Store in a resealable plastic bag in the refrigerator.
* When you are ready to bake the casserole, preheat the oven to 350°F. Take the casserole out of the fridge and sprinkle it over it. Bake for 45 minutes for a softer texture and bread pudding, or an hour or more for a firmer, crispier texture.
* Take individual sessions. Put butter and sprinkle with warm pancake syrup and sprinkle with blueberries.
