°6 cups whole milk, divided
°1/2 cup sugar
°1/2 teaspoon salt
°1/2 cup long grain white rice, I use 1/2 cup full
°2 teaspoons of vanilla extract
°ground cinnamon (optional)

In saucepan, mix 5 1/2 cups c, sugar, / salt. Bring to a boil over medium high heat.
Stir in rice and reduce heat to low. Make sure the heat is set to a gentle simmer.
Stirring, cook about 50 to 60 min. The mixture should thicken to the consistency of yoghurt.
Once thick, removing from heat & adding vanilla.
Let it cool and then put it in the fridge. Stir in the last half a cup of milk just before serving. Sprinkling with cinnamon if desired.
