Beef and Bean Enchiladas


This easy beef and bean enchiladas recipe comes together quickly and is on the table in minutes, making these enchiladas perfect for a nighttime dinner ! 

* Ingredients

° 1 1/2 pouund beef
° 1 tablespoon dried and diced onion flakes (or onions cut into small cubes)
° 1 can of refried beans (16 ounces)
° 1 packet taco seasoning
° 3 enchilada sauce cans
° 12 (6-inch) corn tortillas
° 3 c shredded cheddar cheese

* Methods :

Preheat oven 350. spraying 9" x 13" saucepan with cook spray.
In a large skillet, brown ground beef. Fat drain. Returning meat to skillet. Add onion flakes, refried beans, and taco seasoning. Cook over low heat until the meat is completely heated. Sit aside.

Heat the enchilada sauce in a saucepan over a medium heat. Pour 1 c of sauce to bottom of  9"  13" saucepan.
Wrap the tortilla in a damp paper towel. Microwave for 45-60 seconds, until the tortillas are tender. Brush tortillas with enchilada sauce on both sides. Pour about 1/3 cup of the meat mixture into the center of each tortilla. Put a tablespoon of cheese on it. 

Roll up tortillas and place seam side down in a 9" x 13" saucepan. Repeat with remaining tortillas. Pour the rest of the sauce over the tortillas. Putting rest cheese on top.
Bake for 15-20 minutes, until the cheese has melted and the enchiladas are heated through.
