Treat young and old alike with these blueberry and white chocolate cookies!
* Ingredients :
° 375 ml (1 1/2 cups) all-purpose flour
° 7.5 ml (1/2 tbsp.) Lemon zest
° 5 ml (1 teaspoon) of baking powder
° 1.25 ml (1/4 teaspoon) salt
° 1/2 cup (125 ml) softened butter
° 160 ml (2/3 cup) sugar
° 30 ml (2 tbsp.) Brown sugar
° 1 egg
° 5 ml (1 teaspoon) of vanilla extract
° 250 ml (1 cup) blueberries
° 1/2 cup (125 ml) white chocolate chips
* Steps :
Preheat the oven to 180 ° C (350 ° F).
In a bowl, combine the flour with the lemon zest, baking powder and salt.
In another bowl, cream the butter with the sugar and brown sugar using an electric mixer. Adding egg & vanilla, & whisking to well blended .
Add the dry ingredients to the wet ingredients and stir until a smooth paste is obtained. Add the blueberries and chocolate chips, then stir gently with a wooden spoon.
Line one or two baking sheets with parchment paper. With a spoon, form 15 cookies using about 30 mL (2 tbsp) of dough for each. Place the cookies on the baking sheet, spacing them 5 cm (2 inches) apart. Lightly flatten cookies with fingertips.
Baking , 15 to 18 min , to cookies are light golden.
