Cake-old-southern-recipe

I decided last week that I would start making recipes from the Keiser Kitchen Cookbook, a cookbook compiled in 1969 by moms at Keizer Elementary School PTA fundraiser for Halloween.

* Ingredients :

° 2 cups self-raising flour
° 2 eggs
° 2 cups of sugar
° 2 teaspoons of baking soda
° 2 c crush pineapple (drained)
icing
° 1 c sugar
° 1 stickmargarine (I used butter)
° Small can of pet milk (5 ounces)
° 1 cup coconut
° 1 teaspoon vanilla
° 1 cup chopped pecans

* Directions :

Blend all ingredients & pour to a greased 9" * 13" skillet.
Bake for 25 minutes or until tests are done in a 350-degree oven.
Snow while still warm.
icing
Boil the sugar, ghee and milk for 2 minutes (stirring constantly).
Remove from heat. Adding coconut, vanilla, & groundnuts.
Pour on cake while it is still waarm.
Making yum yum powder
This cake lives up to its name.Actually, I think it should be called Yum Yum Eat Em Up Cake.It tastes like an overturned pineapple cake.Ice makes it very wet and sticky.I'm sure I said "yummmmmmmm" at least once when tasting it.

Enjoy !
