This comforting soup will do you the greatest good during the cold season.

* Ingredients :
° 1 foot of broccoli
° 2 tbsp. tablespoon of butter
° 2 onions, diced
° 3 garlic cloves, chopped
° 1 1/2 tsp. salt
° 1/4 tsp. pepper
° 3 tbsp. all-purpose flour
° 900 ml (3 2/3 cups) vegetable broth without salt
° 500 ml (2 cups) milk
° 1 1/2 cups (375 ml) sharp cheddar cheese, grated
° Cayenne pepper (optional)
* Preperation :
Cut the broccoli by separating the stems and florets, then finely chop the stems - you should have 1.5 liters (6 cups) of broccoli.
In saucepan on heat, melt butter. Add the onion and broccoli stem pieces, stirring occasionally, for 7 minutes. Add the garlic, salt and pepper, and stir until the garlic is fragrant, 2 minutes. Adding flour and continue cooking for 1 minute.
Gradually add the vegetable broth and milk while stirring. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer until the broccoli pieces are tender when pricked with a fork, about 4 minutes. Add the broccoli florets and cook until tender, about 4 minutes. Remove the pan from the heat.
Using a hand blender, reduce the soup to a smooth puree. Return the pan to low heat and stir in the cheddar. Divide the soup between bowls and garnish, if desired, with grated sharp cheddar and cayenne pepper.
