BANANA-PUDDING-CAKE



As someone who loves both banana pudding and banana cake, I couldn't be more excited about this delicious Banana Buttermilk Cake recipe!

* Ingredients :

° 2 cups of milk
° 2 eggs, separated
° 2/3 cup sugar
° 1/8 teaspoon salt
° 2 tablespoons cornstarch
° 1 teaspoon vanilla
° 48 Sunshine Vanilla Wafer
° 4 bananas (ripe)
° 1/4 cup sugar

* Directions :

 Boil the milk over a double boiler over a direct heat.

Meanwhile, in a small bowl, combine the beaten egg yolks, 2/3 cup sugar, salt and cornstarch.Pour about ½ cup of the grated milk over the egg mixture, stirring until well blended.Return the egg mixture to the remaining milk in a double boiler and place it on the boiling water.Cook, stirring constantly, until the mixture is smooth and thickened (about 6 minutes).

Remove from the heather and add the vanilla.Alternate layers of vanilla wafers and banana slices in a 9-inch square cake or 11/2 quart casserole dish.Pour over the hot pastry cream and let cool.

Preheat the oven to 425 degrees Fahrenheit (a moderately hot oven).Beat eggs until firm but not dry. add the rest 1/4 c sugar, keep to whisk to meringue is very stiff & shiny. Spread over pudding and toast in preheated oven for 15 minutes. Makes 6 to 8 servings.
