Blueberry Lemon Muffins



*ingredients


° 1 1/2 c or froz berries

° 2 cups plus 3 tablespoons flour, divided

° 1 1/2 tsp baking powder

° Half a teaspoon of salt

°½ c butter

° 2 egg

° 1 c sugar

° 1 tsp lemon extract

°7 tsp milk

° 1 tsp lemon peel

° streusel:

° Half  cup of sugar

° 2 tsp of flour

° Half a c of brown sugar

° 2 tablespoons melted butter


* Methods : 


The first step:

Preheat oven to 350*

Putting paper muffin cups in  baking tray

The 2 step:

Mixing streusel in  bowl

In other small bowl, mixing blueberries with 2 tsp of flour, stir until the blueberries are coat, then removing with  perforated spoon to get rid excess flour. 

Third step:

In  sized bowl, mixing flour, baking powder, & salt

In  bowl, mixing butter also sugar to mixture is fluffy, & add eggs, vanilla, milk, lemon extract, & lemon peel.

Using an electric mixer, mix well

The fourth step:

Add the flour until the mixture is homogeneous

Gently fold in blueberries

Fifth step:

Fill each muffin cup full

Sprinkling every muffin with about 1 tsp of streusel layer

Bake for 20 to 25 minutes, until golden brown

Sixth step:

Seventh step:

Allow it to cool for a few minutes before removing it and placing it on the cooling rack

Serve immediately or store tightly covered on the counter
