*Christmas-Maraschino-Cherry-Shortbread Cookie*


*Ingredients
° 1 c un-salted butter 
° 1/2 c powder sugar
° 1/2 tsp vanilla extract
° 2 c all-purpose flour
° 1/2 tsp salt
° 3/4 cup chopped maraschino cherries (sprinkle the cherries on a paper towel to drain well or you can use dried maraschino cherries)
2/3 cup chocolate chips


* Preparation : 

Mix flour and salt and set aside.
Cream 1 c soft un-salted butter with 12 c icing sugar, blend with vanilla.
Adding flour mix & salt & mix to it starts to form larger-clumps.
Blend chocolate chips also maraschino-cherrie .
Form the dough into the stem and press well, or it will fall apart when cutting the biscuit (the log should be about 2 inches thick) Wrap it in plastic wrap and refrigerate for at least 1 to 2 hours. 
Preheat oven to 325 degrees f  & line baking tray with paperparchment.
Cut the log into 1/4- or 1/3-inch-thick slices (if the slices fall apart, press them back in with your hands) and place them on a baking sheet, leaving an inch of space between them. 
Bake cookies for 10-15 minutes (until they start to turn slightly golden brown on top)
Let them cool for 5 minutes on a baking sheet before transferring them to the rack to cool completely.
